Is it possible to create a plugin that can add functionality to the UI?
It would be nice if I could add a new option to eg. this menu, or a complete separate menu would be fine as well.
Is this in any way possible?

I have not look at the plugin architecture that closely but no, I don’t think the plugins can add UI functionality. However, you can write your own UI that works with vault APIs and your own vault plugin to provide additional functions.
That was too bad 
I would rather not create my own UI for this.
