Upgrade KV engine from KV1 to KV2

Could anyone please guide me to the right document/ links for upgrading kv engine from KV1 to KV2 with less downtime and better mechanism to avoid any issues in Prod.

Ok, in case we had to take the downtime to ensure the no updates to consul/backend, is there any better steps given in hashicorp site/blogs for this activity?
