Is there any way create a folder structure just for extra readability while keeping everything in a single module?
No. A directory is a module, so any subdirectories are modules in their own right.
However you can have as many *.tf files within a directory/module as you like, so you can split things up however you want to aid readability/understanding.
Yeah, I got that. I was just hoping there would be some configuration to force it to ignore the folders to keep it down to 1 module. Thanks
