I would like to trial Boundary server.
What are my options? Is there a Cloud-based sandbox I can use? Or do I have install and deploy locally ?

You can trial Boundary using our cloud platform, HCP, here: HashiCorp Cloud Platform
You should get $500 of trial credit when you create an account and org on HCP: Billing Overview | HashiCorp Cloud Platform | HashiCorp Developer
… and if you want, you can also install and deploy Boundary locally using the community edition: Self-managed quick start | Boundary | HashiCorp Developer
HCP should let you trial the Enterprise version of Boundary
